Ingredients
  

  • 3 cups flour spooned and leveled
  • ½ cup brown sugar + 2 tablespoons, divided
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 10 + 3 tbsp butter, divided
  • 4 tbsp ground cinnamon
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tbsp vanilla

Instructions
 

  • Preheat oven to 425 degrees.
  • Cut butter into cubes, then freeze until ready to add it.
  • Use a prepared cast iron skillet or other desired pan. If using a pan other than cast iron, grease then flour the pan.
  • In a large mixing bowl, add the flour, sugar, salt, baking powder, and baking soda.
  • Cut butter into the flour mixture, leaving pieces of butter.
  • In a mixing bowl, beat together the buttermilk, eggs, and vanilla.
  • Cut remaining butter into small pieces.
  • In a separate bowl, add remaining butter, brown sugar, and the cinnamon.
  • Melt the butter and sugar mixture in the microwave. Allow to cool slightly, then pour gently onto a sheet of parchment paper and press and freeze.
  • Pour buttermilk mixture into flour mixture and stir until just combined.
  • Once chilled, cut the cinnamon butter into pieces and stir into the dough.
  • Spread mixture into pan or skillet, then bake for 23-25 minutes.
  • Cool, cut into eighths, and serve. Store in an air-tight container for up to 4 days.

Ingredients
  

  • 8 cups broccoli
  • ½ lb bacon
  • 1 cup sunflower seeds
  • 1 whole red onion sliced thin
  • 1 cup mayonnaise
  • 2 tbsp vinegar
  • ½ cup granulated sugar
  • 1 cup golden raisins
  • 1 cup red raisins
  • 1 cup dried cranberries

Instructions
 

  • In a large skillet, brown bacon. Lay on paper towels to cool, then crumble.
  • Wash and cut up broccoli, then place in a large mixing bowl and add onion slices.
  • In a separate bowl, whisk together mayo, vinegar, and sugar.
  • Pour dressing over broccoli and mix to coat.
  • Add bacon, raisins, cranberries, and seeds.
  • Mix well and serve. Refrigerate.

Ingredients
  

  • 2 ½ cups flour
  • 3 tbsp sugar
  • ¾ tsp salt
  • 2 tbsp baking powder
  • 2 eggs beaten
  • 2 ¼ milk
  • ¾ cup oil
  • ½ cup cocoa divided
  • ¼ cup cocoa divided
  • 1 cup mini chocolate chips extra for sprinkling on top
  • whipped cream for topping

Instructions
 

  • In a large bowl, beat the eggs with a whisk until they're light lemon yellow and fluffy. Add the milk, oil, salt, and sugar and whisk together. 
  • Add the flour and baking powder and whisk together just until ingredients are mixed. Batter may be a little lumpy, but that's okay.
  • Divide the batter into thirds.
  • In the first bowl, add 1/2 cup of cocoa and 1/3 cup of mini chocolate chips. Blend well.
  • In the second bowl, add 1/4 cup of cocoa and 1/3 cup of chocolate chips. Blend well. 
  • In the third bowl, add 1/3 cup of mini chocolate chips. Blend well.
  • Cook pancakes until golden brown. Drizzle with syrup, whipped cream, and a sprinkle of chocolate chips.

Ingredients
  

  • 1 cup brown sugar
  • 1 cup buttermilk
  • ⅔ cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 2 ½ cup flour
  • 1 ½ cup rhubarb diced
  • ½ cup walnuts chopped
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt

Streusel Topping

  • ½ cup sugar
  • 1 tbsp butter
  • 1 tsp cinnamon

Instructions
 

  • In a medium mixing bowl, combine brown sugar, buttermilk, oil, egg, and vanilla; mix until combined. Set aside.
  • In a large mixing bowl, combine flour, rhubarb, walnuts, baking powder, baking soda, and salt and mix well. Add wet ingredients to dry ingredients; mix just until combined. Pour evenly into two 8” x 4” greased/floured loaf pans.
  • For streusel topping, combine sugar, butter, and cinnamon in a small bowl and mix with a fork until it has a wet sand consistency; sprinkle over batter.
  • Bake at 350° for 60 minutes or until a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes before removing from pans to wire racks. Cut with a serrated knife.

Equipment

  • Instant Pot Pressure Cooker
  • Immersion Blender

Ingredients
  

  • 2-3 lbs gold potatoes peeled and chopped
  • 1 large yellow onion chopped
  • 6 strips bacon
  • 4 stalks celery sliced
  • 5 carrots peeled and sliced
  • 2 tsp minced garlic
  • 4 cups chicken broth
  • ½ cup heavy cream

Optional Topping

  • sour cream
  • shredded colby jack cheese

Instructions
 

  • Peel and chop the potatoes and carrots. Then wash the celery, trim the ends, and slice.
  • Turn the Instant Pot on SAUTE and place the strips of bacon in the cooker. Cook until crispy. Add the chopped onion and cook until light brown.
  • Add the potatoes, carrots, celery, garlic, and chicken broth to the pot then fill with enough water to cover the vegetables. Note: be sure not to exceed the max fill line.
  • Turn off the SAUTE setting, stir, and place the lid on the Instant Pot. Make sure the pressure seal is set to SEALING.
  • Press the MANUAL setting and set the time to 10 minutes.
  • Once cooked, do a quick release. When all pressure has been released, check that the FLOAT VALVE is down (see your instruction manual if you don't know where this is on your Instant Pot) and remove the lid.
  • Use an immersion blender to blend all of the vegetables together until the soup is smooth. Add in the heavy cream and stir well. Serve immediately with optional cheese and sour cream topping.

Ingredients
  

  • 8 oz cream cheese softened
  • 3 tbsp butter softened
  • 1 ½ tbsp Primal Kitchen chocolate protein powder
  • 1 ¼ tbsp Stevia for baking
  • 8 oz Lily's White Baking Chocolate bar melted
  • 8 drops red food coloring +/- to create desired shade

For the Red Sugar

  • ¼ cup Stevia for baking
  • 8 drops red food coloring +/- to create desired shade

Instructions
 

  • Line a cookie sheet with parchment paper and set aside.
  • Place 1/4 cup of Stevia in a shallow dish. Add drops of red food coloring and mix thoroughly. Set aside.
  • In a mixing bowl, add the softened cream cheese, butter, and Stevia. Whip with the whisk attachment on an electric mixer until light and fluffy.
  • Add the chocolate protein powder and vanilla. Mix until blended and smooth, scraping down the sides of the bowl as needed.
  • Add drops of red food coloring and mix on low for 1 minute or until the food coloring is evenly dispersed.
  • Spoon out about a tablespoon of the mixture and roll into balls. Place of parchment lined baking sheet. Continue until all the mixture is used.
  • In a separate microwave safe bowl, melt the white chocolate at 10 second intervals until it is fully melted and smooth when stirred.
  • Using a fork or skewer, dip each ball in the melted chocolate, allow excess to drip off, and then roll it in the red Stevia. Allow to cool and harden on the parchment lined baking sheet.
  • Refrigerate for at least 4 hours or overnight for best results.

Ingredients
  

  • 1 whole Rotisserie chicken
  • 1 tbsp butter
  • 1 large yellow onion chopped
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 1 tsp minced garlic
  • 2 lbs Velveeta cheese
  • 1 6 oz package sour cream
  • 1 cup chicken broth
  • 1 16 oz bottle Buffalo sauce

Instructions
 

  • Pull the chicken off of the Rotisserie chicken, cut into bite size pieces, and set aside.
  • Turn the Instant Pot to SAUTE and pop the butter in. When melted, add the onion, red pepper, and green pepper. Sauté for about 10 minutes or until the onion begins to turn golden brown.
  • Turn off the SAUTE setting and add the chopped chicken, Velveeta, sour cream, minced garlic, chicken broth, and the entire bottle of Buffalo Sauce. Stir until blended.
  • Place the lid on the Instant Pot and turn until it locks. Set the pressure valve to SEALING.
  • Press the MANUAL button and set the time to 5 minutes.
  • When finished cooking, do a quick release and open the lid once the pressure has completely been released.
  • Stir the ingredients until everything is well blended. Serve with tortilla chips, crackers, or crusty bread.
