Line a cookie sheet with parchment paper and set aside.
Place 1/4 cup of Stevia in a shallow dish. Add drops of red food coloring and mix thoroughly. Set aside.
In a mixing bowl, add the softened cream cheese, butter, and Stevia. Whip with the whisk attachment on an electric mixer until light and fluffy.
Add the chocolate protein powder and vanilla. Mix until blended and smooth, scraping down the sides of the bowl as needed.
Add drops of red food coloring and mix on low for 1 minute or until the food coloring is evenly dispersed.
Spoon out about a tablespoon of the mixture and roll into balls. Place of parchment lined baking sheet. Continue until all the mixture is used.
In a separate microwave safe bowl, melt the white chocolate at 10 second intervals until it is fully melted and smooth when stirred.
Using a fork or skewer, dip each ball in the melted chocolate, allow excess to drip off, and then roll it in the red Stevia. Allow to cool and harden on the parchment lined baking sheet.
Refrigerate for at least 4 hours or overnight for best results.
